You’re biting your bottom lip because a glass of soda water with a dash of lime isn’t cutting it for you anymore. You need something refreshing, inviting and tasty, but you don’t want to suffer from a sugar overload or wake up with a hangover in the morning. You want something that tastes great, but without the calories.
Boy have I got something tasty for you.
Make a jug of this to have all to yourself, or invite the gal pals over and prepare a healthy platter, put on some great music and pour a few glasses of my boysenberry spiced mocktail.
And thanks to Equal Spoonful, because of the lesser calories than normal sugar, you can sip away all night long!
Here’s what you’ll need:
- 1 1/2 cups of frozen boysenberries (if you cannot find fresh)
- 3 cups of water to start with, 2 cups towards the end (5 in total)
- 3/4 tsp of cinnamon
- 6 cardamon pods
- 1 large star anise
- 1/4 tsp of crushed ginger
- 4 tablespoons of lime juice
- 3 tablespoons of Equal Spoonful
- Soda water
In a large pot, mix your water, berries and all spices. Bring to a rolling boil, and then turn the heat down to medium. Add yourEqual Spoonful. Cover and leave on a medium heat to simmer for 20 minutes, stirring occasionally.
Once the 20 minutes is up, add the remaining two cups of water, cover and leave to simmer again for a further 20 minutes.
Remove from the heat, and strain into a large heatproof bowl. Use the back of a spoon to push through as much of the juices from the berries as you can. Set aside to cool.
Serve in your favourite glass, filled to the brim with ice, and a couple of slices of your favourite citrus fruit, I’ve opted for lemon and lime. Pour approx half of the mix over the top of the ice, and then top with soda water.
