A basic cookie for the basic baker

They say practice makes perfect, and boy oh boy I am learning this is true. I’ve mentioned before I am absolutely rubbish when it comes to baking cookies, but slowly, I am nailing it. Slowly…..

This recipe is about as basic as cookies can get. ¬†They’re also gluten free, egg free and refined sugar free too, which is a huge bonus.

Tip: If you’re not a fan of ginger (I know some people hate it) then toss it aside and throw in some chocolate chips, or even some dried cranberries.

Gluten Free Refined Sugar Free Cookies Ginger Cacao

Here’s what you’ll need:

2 large tablespoons of cacao (i’ve used one by Natava Superfoods)
1 1/2 cups of all purpose gluten free flour
1 large tsp of crushed or freshly grated ginger
100 grams of softened butter
1/2 cup of coconut sugar
1 tsp of baking soda

Preheat your oven to 180 c.

Combine your dry ingredients into a large bowl. Add the softened butter and ginger. With your hands, combine the butter and the dry ingredients until you can form a ball of dough.

Form your dough into 12 small balls and place on a large grease proofed baking tray (I use butter, I hate baking paper) press down with a fork.

Bake at 180c for approx 15 minutes or until golden brown.
