How To Get A Sugar Rush At Christmas

I was absolutely beside myself when in October, people were asking me “What recipes are you doing for Christmas this year?” “Is it too early to put decorations up?” “Have you started Christmas shopping yet”

But, now it’s getting so much closer to Christmas and I am a little bit happier to switch off my grinch hat and start providing you guys with some of my favourite recipes for the festive season.

Behold, Christmas Rocky Road!

Christmas Rocky Road THe Food Nest NZ

Here’s what you’ll need

  • 375 grams White Chocolate
  • 6 large cubes of Crystalized Ginger
  • 1/4 cup of Almonds
  • 1/4 cup of glazed Cherries
  • 2 tablespoons of melted Dark Chocolate 1 tablespoon of Cream mixed through it
  • 3 tablespoons of melted White Chocolate with 1 to 2 tablespoons of Cream mixed through it
  • 1 cup of small Marshmallows
  • Red and green food colouring

In a blender wizz up the following items: Cherries, Almonds, and Ginger.

Don’t blend too much, just enough to cut them all up into chunky pieces.

Over a bain-marie, melt your White Chocolate thoroughly. Once completely melted, stir in your above blended items. Then add your Marshmallows.

Pack into a greased tin and leave in the fridge to set for about an hour. From there, you can melt the rest of your chocolate, add the cream to it to thin it out slightly (you want to create a ganache) divide it up and mix with your colours of choice, and decorate the top how you please!

Note: When it comes to decorating my skills are about a 3 out of 10. Look at that BIG DOLLOP of green icing. Reminder to self, get a piping bag.

The great thing about this recipe is how quick and easy it is to make and how adaptable it is. You can add or omit anything you like to it, pistachios are a great addition, as well as things like broken up biscuits.
