Easy Peasy Corn Fritters – Brunch Recipes (Part One)

I love brunch. I love to make brunch, go to brunch, eat brunch, you get the idea. I don’t eat breakfast most days and I know – that’s terrible, but A – time, B – cereal is gross and C – my tummy prefers coffee over food in the morning.

I’ve decided to bring to the blog a series all about brunch. I am going to keep it simple and easy, but of course, tasty. Because to be honest, time is of the essence, especially in the mornings!

When I have time in the morning, I like to get up, get myself together (I am horrible in the mornings, honestly, when I started dating my partner he once made a WOAH noise at me, it’s a sight for sore eyes) Then I open the fridge/pantry, and I get inspiration from whatever is in there at the time. I never ever plan ahead for brunch to be honest, because it’s one of those meal times that doesn’t require a lot of thought, or ingredients (in my opinion)

Here’s what you’ll need:

1 can of creamed corn
1 cup of flour (Gluten Free, or Plain)
1 egg
Salt and Pepper to season
Bacon (optional)
Sour Cream (optional)
Hot Sauce/Chilli Sauce (optional)

In a bowl, mix in your corn, flour and egg and seasoning. Heat your pan and with a spoon, place your mixture in – I usually make small to medium sized ones (about 3 or 4 tbl spoons) Keep your heat on a medium temperature as these are prone to burning.

When do you flip them?! Well I like to treat them like Pikelets and wait for bubbles – just one or two, and then flip! Wait one to two minutes, and remove from the pan. Serve with your favourite sauce/side. Crispy bacon is my favourite, but things like roasted Tomatoes, Capsicum, are really great too.

  1. YUM!! I love weekend brunches. We used to go out a bit, but now most weekends we’ll make a yummy at home brunch, especially now we have a coffee machine. I went through a stage of blueberry wholemeal pancakes, but usually it’s something simple like eggs on some yummy bread from the bakery. I should do corn fritters one day though – they are a go to light summer meal but they would be a yummy brunch too.

    1. Ohhhh I never have pancakes! My partner is a savoury breakfast kinda guy. We have these fritters for dinner with a light salad, so good

  2. OH HECK YES, brunch is my jam. If I’m feeling in the mood for sweet I go for pancakes or vegan sticky rice. For savoury I love kumara rosti with poached eggs, hollandaise, bacon and salmon (because picking between bacon and salmon is for rookies).
